We know exactly where our coffee is grown, who grew it, how it was processed, and how it scored before it reaches you.

🤝 Direct Trade

Our beans reach us through direct relationships with farms and cooperatives, not through commodity brokers. We know which farms and co-ops grew them, and how they were processed.

Q-Graded 84–85+

Every lot is evaluated by certified Q-graders before we accept it. Scoring 84–85+ places our beans firmly in specialty grade, the top tier of global coffee quality.

Our coffee is roasted in Alberta, and it is roasted to a profile rather than a timer. Each origin gets its own curve, and every batch is roasted to that curve so the cup is the same bag after bag.

Infrared drum roasting gives precise control over temperature curves. Every batch is profiled individually. It is the same technology used by the best specialty roasters in North America.

Harvest
Cherries are hand-picked at peak ripeness by farming families in Brazil, Colombia, Guatemala, Peru, and Mexico. Only ripe cherries make the cut.

Processing
Depending on origin: washed, natural, or Swiss Water Process. Each method chosen to bring out the best characteristics of that specific bean.

Quality Control
Beans are Q-graded at 84–85+, inspected by third-party assessors, and verified for consistency before export. Nothing leaves origin without passing.

Roasting
Roasted weekly in small batches on Diedrich infrared drum roasters. Each roast is profiled to its origin's strengths.
